To accompany the steak, we were offered creamed spinach, sauteed mushrooms (<span class="blsp-spelling-corrected" id="SPELLING_ERROR_11">amazing</span>) and sauteed sugar snap peas.<br /><br /><div>The topper and highlight to the evening for me was the creme <span class="blsp-spelling-error" id="SPELLING_ERROR_12">brulee</span>. Our was great but after all the beach, sun, burgers and hot dogs, I was drained and needed something easy and to use up some leftovers. So, I turned to my freezer and produce bin. I had an aging avocado, half a red pepper, some red onion, salad mix, 4 corn on the cob and some whole wheat hamburger rolls. And in my freezer, I had some <span class="blsp-spelling-error" id="SPELLING_ERROR_2">BOCA</span> <span class="blsp-spelling-error" id="SPELLING_ERROR_3">chick'n</span> patties so I went to work.<br /><br />I first put water on the stove for the corn and then mashed the avocado. I tossed in some cilantro from our garden together and salt in with the avocado and mixed it well. I then heated the <span class="blsp-spelling-error" id="SPELLING_ERROR_4">chick'n</span> patty, assembled the remaining ingredients on the bun and was ready for dinner.<br /><br />The buns I used were sent to me as part of the <span class="blsp-spelling-error" id="SPELLING_ERROR_5">FoodBuzz</span> featured publisher program as Nature's Pride is trying to overhaul their bread line. Combine sugar and crackers in a food processor and pulse until very finely chopped then add melted butter. Press into prepared muffin tins and put in freezer while preparing the filling.<br /><br />Beat cream cheese, <span class="blsp-spelling-error" id="SPELLING_ERROR_3">crème</span> <span class="blsp-spelling-error" id="SPELLING_ERROR_4">fraîche</span> and confectioners’ sugar in the bowl of an electric mixer with paddle attachment. In a separate bowl beat heavy cream until still peaks form and fold into cream cheese mixture. Spoon a little into each crust and freeze until firm, about 30 minutes.<br /><br />When ready to serve, gently pull out cheesecakes from tin by pulling on the plastic wrap and carefully remove the plastic wrap from the crust. Top each cup with mixed berries of your choice and drizzle with confectioners’ sugar. Garnish with fresh mint leaves. Add chicken strips to yogurt marinade and toss until well coated. Cover and let chicken marinate in the refrigerator for up to 2 hrs.</div><br /><div>Weave the chicken strips onto the skewers down the center of the chicken so that it stays on during grilling. Grill the chicken <span class="blsp-spelling-error" id="SPELLING_ERROR_6">satays</span> over medium heat for 3 – 5 minutes on each side until they are seared and cooked through. </div><div><br />To make the sauce: Combine all ingredients with a whisk in a small bowl, adding the water last. We then printed some image/photos on 3-hole paper (we had bought it by mistake) although you can print on plain 85. x 11 and use a hole puncher. I am greatly appreciative of the mention and an honored to be in this magazine.<br /><br />When the issue arrived, I flipped right to the Editors page (page 8) and after reading the article, knew right away that the next recipe I would be trying out was the <a href="http://www.eatingwell.com/recipes/tomato_corn_pie.html"><span style="color:#3333ff;">Tomato-Corn Pie</span></a><span style="color:#3333ff;">.</span> I just finished making it for dinner tonight and must say that this pie is fantastic. Yes, you can freeze some and use some as a spread but you can also use it in a vinaigrette.<br /><br />I grabbed a few teaspoons, placed then into a mini-processor, added a few tablespoons of red wine vinegar and pulsed it until it was well emulsified. Smart eh? Then pour a little olive oil at a time into the top of the mini-processor and pulse as it streams in until the mixture is emulsified. </div><br /><div></div><div>I love to use pesto as a spread on sandwiches or on pasta.
