EatingWell Wednesday - Cream Cheese & Pesto Stuffed Chicken Breasts

I found some organic (Nature's Promise) chicken breasts and as you all know, I have plenty of Basil so what to do? I typed in basil and chicken breasts at EatingWell.com and decided to go with Cream Cheese & Pesto Stuffed Chicken Breasts.

To be honest, I was not sure how much it appealed to me but knowing we enjoy each ingredient on it's own made me think this would be good. Boy, I was wrong as it was not good, it was great!

Have you ever stuffed chicken breasts?

That looks absolutely delicious! I have stuffed chicken breasts before, with ham and Swiss cheese. :)

Ooh, yum. I've stuffed chicken breasts with cheese and mushrooms before, and it was quite delicious! Really helps to prevent the chicken from being too dry.

They look delicious! I have never personally stuffed a chicken breast, but I may start with this combination.

I just found you site and I love your blog! Your food looks delicious! We stuff chicken breasts with chopped spinach, a little bit of chopped onion and feta! mmmm!
