Chicken Burgers with Roasted Red Pepper & Baby Spinach

In an attempt to switch up the chicken consumption from the usual breasts, I opted to make chicken burgers. I also wanted to finish up a few items in the fridge so maybe I should call these 'Kitchen Sink' burgers. I guess that is not very appetizing...heck, you name them and leave me a comment with your suggestion.



1 lb. ground chicken breast
1/3 whole wheat panko bread crumbs
1/3 cup feta, crumbled (use reduced fat if you wish)
2 tablespoon scallions, minced
1 garlic clove, chopped
Roasted red peppers (I used 1 left from a jar)
1/2 cup baby spinach, chopped
dash salt & pepper

1. Mix the first 5 ingredients together and shape into 4 patties. Spray a pan with olive oil spray and heat over medium-high.

2. Cook burgers approx. 5 minutes per side (I honestly did not time it). Place on bottom of the roll, top with roasted red peppers and baby spinach. I also made some taziki with Greek yogurt to serve with but that is optional.

We ate these on a fresh Nature's Promise toasted onion rolls. Be sure to only use a dash of salt as the feta is salty.

Sounds good. I am making turkey burgers for lunch, thinking I may add roasted peppers on them as well. Your photo looks good enough to eat! :)
