I have a difficult time finding good foods that my children will eat. One likes one thing, and the other doesn't like it.

My biggest challenge is creating healthy meals from scratch without breaking the bank. It's so easy to go overboard on quality ingredients and fresh fruit and veggies.

I have 2 big problems -
1. finding healthy + inexpensive snacks that my kids can pick up and eat by themselves
2. creating a variety of meals to keep them excited as well as nourished.

I solve these mostly by making interesting snacks out of fruits and vegetables - we have an evening snack time when we all will sit together and just snack on vegetables/fruit. They love the "experience".

For variety in meals, I try to prep things ahead of time - I realize that simple things make a big difference to the kids - they love the smell of fresh spices like basil and such. We try to involve the kids in some of the food preparation - they are just 3 and 2 but it works quite a bit!

Surprisingly enough it is not feeding son healthily food that is the challenge but feeding my husband and I is. I don't it is difficult to find foods that my husband will eat that are healthy and taste good. He is picker then any child I have every met. We are working on getting him to eat food that is better then him so that he will be hear for our future grandbabies.

We have 2 eateries going on here... the mama's milk eatery and the rest of the family. Since I make my own baby food (just call me Bessie), the baby eats very healthy. He gets a jar or two of baby food in there now and then, too - but he prefers his milk to any other food source. My main trouble with keeping him fed well is just remembering to DRINK A TON OF WATER.

As for the rest of us - the main hindrance to eating more healthy are: 1. laziness (if you don't plan ahead you end up in the drive thru lane), 2. money (what's with the cost of groceries these days? I'd rather buy organic, but MAN - I can hardly get outa the store with my arm and leg), and 3. junk-food cravings (we have GOT to give up the Coke and sweets before we all end up with broken pancreases).

I've written about this challenge many times over the years I have blogged.

...and of course... everybody has to throw out those New Years Resolutions (and then struggle and fail to keep them, unfortunately):

A Healthier '08

We're making an effort to cook more from scratch and eat more raw foods... and I'm getting to the point where we really are going to have to quit the sugar overdose. You don't think about all the sugar you take in until you really write it down... sweet tea, sweet coffee, juice, carbs in your breads - crackers - fruits - veggies - cereals, added sugar in the hidden ingredients, etc. That's not even including the desserts and sodas! Man, alive.

Now I've written a book. That's gotta count for somethin'.

Send me to NC, baby. If not, I'll have to wait until Blissdom or something. That 'I Heart Faces' conference sounds pretty groovy, too.

Cost is a big factor in being able to buy organic, but I do the best I can with what we have. I have a 7 month old son who loves Earth's Best 2nd Stage foods. I would love to find yogurt melts in an organic brand as he loves to self-feed and for some reason puffs don't agree with him. As for us parents, we are trying to incorporate more raw foods into our diets!

My biggest challenge is that almost every one in my family is a picky eater - but in different ways. Especially my husband - he's the pickiest of all, and there's very little I can do about it. I'm starting to try harder with the kids, but I find that the more busy and stressed out I am, the harder it is to get motivated to even try feeding everyone healthier. Sigh...

My biggest challenge is that my six kids do 2 sports or activities each and we are often going 27 different ways all at the same time. It's hard enough to get food into them, and trying to make sure it's healthy, nutritious and delicious is enough to make me cranky some days.

My biggest challenge for feeding my family is time management. Shopping for different ingredients, keeping costs low, chopping, and preparing, while at the same time storing in an efficient manner take a lot of balancing. On top of this, I handle several different palettes and nutrition needs.
