Recently, I have been asked about dessert options and with Thanksgiving coming, I wanted to think of a classic made a bit healthier. Naturally, I headed to EatingWell knowing that they would have a 'madeover' option.
Their sweet potato casserole incorporates, orange zest, vanilla and honey and I knew from the scent that it would be amazing.
For the topping, I used oatmeal in place of pecans. In addition, since I did not have OJ concentrate, I placed some OJ in the freezer and voila', my frozen concentrate was born.

One can never go wrong with sweet potatoes, I say!!
Eating Well is another of my very favorite resources. I've made many of their goodies over the years and have never been disappointed. I would love for you to join me for Crock Pot Wednesday whenever you can.

I adore sweet potato casserole but I seem to be a minority so it doesn't make it to the T-day table. 8-( Perhaps I can make an individual serving, just for me. When everyone sees how wonderful it is, they'll be jealous and want some, too! (At least, that's how the daydream goes . . . )
Sweet potatoes in any recipe are great. This one looks particularly tasty.
