It seems that an old standby for many of us is the toasted English muffin with peanut butter. I decided to be creative and whipped together a fabulous little 'breakfast' or anytime option and just had to share.
First of all, I want you to find a quality (actual whole wheat flour, no preservatives, no enriched/modified anything) English muffin, toast it and then smear it with some hummus and place a few slices of tomato (I had some 'grape' variety) on it. I promise, it is satisfying.

Very nice, simple idea! I just recently fell in love with Hummus, and need more things to do with it. Thanks!
Making hummus today, so this is perfect timing. Looks delish
a very healthy idea.
This will shake my breakfast up a bit :). I'm so predictable: english muffin with butter, and coffee.
My daughter loves this but never tried it on an English muffin...we usually do pita bread...Im sure it's great!
I make the best cashew hummus! I put it on dehydrated onion bread which is delish! I like this non-Raw version too. You can't go wrong with hummus: )
yum, i am always looking for more savory breakfast options. but where do you find these quality english muffins? is there a certain store you go to or a certain brand to look for?
HI Robyn: I find 'Matthew's All Natural' at my local Stop & Shop'
Yum! Looks great. I have been on a roasted tomato kick lately, and I think these would be great with some slow-roasted tomatoes!
Oh this looks so fresh and delicious!
