Roasted Balsamic Cauliflower with Garlic & Olive Oil

Three of the four of us are huge roasted cauliflower fans and since w are also balsamic vinegar fans, I tried out a new recipe and it was a hit.

Ingredients:

1 large head of organic cauliflower

1/3 cup balsamic vinegar

1/4 cup EVOO

2 cloves of garlic, minced

Salt &Pepper

1.Preheat the over to 400 degrees.

2. Whisk the vinegar and EVOO until well blended. Add in the garlic and some salt and pepper.

3. Toss with cauliflower and roast for approx. 20-25 minutes depending on the size of the florets.

That sounds good. I've never roasted cauliflower before. What temperature do you roast it at? Do you toss the cauliflower in the dressing before or after you roast it?

SO sorry Margot: I updated the instructions. I guess my multitasking skills are off today.

Looks like a wonderful dish! I bet it would be delicious with a mix of cauliflower and broccoli. I am actually more of a broccoli fan than a cauliflower fan... although I do like them both.
