EatingWell Wednesday - The 'Yucky' Shake & Wake-Up Smoothies

Last week, I tweeted out a question 'What would you like me to make next?' and I had a smoothie request so here it goes: 'My Yucky Shake' story and recipe.

My son and I love bananas but my daughter and husband despise them. I make a simple and yummy banana smoothie that my daughter (and now son) refer to as the 'Yucky Shake'. My son and I love to drink them together and I personally take joy in the fact that I only have to share with one child instead of two. See, when I make the smoothie, it is because I really want one and so it is nice that I usually get some of it when only on child is after me instead of two.

The Yucky Shake:
1 cup of 1% organic milk
1 ripe banana
A handful of ice.

Place all ingredients into a blender, first blend on 'ice crush', then give it a good spin on blend. Once frothy, pour into a cup and gulp, I mean slowly ingest.

Since I was thinking so much about smoothies, I decided that I need to start getting a bit more creative so I headed over to EatingWell Magazine . I found a link titled "Kid-Friendly' smoothies and made the 'The Wake-Up Smoothie' . It was dreamy. However, I thought it was definitely sweet enough so skip the sugar. Also, I used Stonyfield Oikos Plain Non-Fat Greek Yogurt in the recipe.

Homepathy an Option for Family Health? Boiron says 'Yes'

We know it is coming, yes the Flu and Common Cold season. We also know that there are many warnings about treating young children with the current FDA approved decongestants, antihistamines and cough suppressants so what do we do when they are sick? What do we give them to help them feel more comfortable?

While I was at the TypeA Mom Conference last month, I was talking with many of the companies there and one of the companies was Boiron. Since then, I have been looking over the products that we were all given and have been researching them more and thought I would share some information and questions.


The samples I received

So who is Boiron? Boiron is a world leader in homeopathy so that tells me that they are not some duo making this stuff in their basement. They are best known for the top-selling flu medicine, Oscillococcinum, and its Arnicare line of pain relievers. They state that they "maintain the highest standards in manufacturing, complying with U.S. Food and Drug Administration regulations, the Homeopathic Pharmacopoeia of the United States and drug Good Manufacturing Practices."

What is Homeopathy? "Homeopathy is a therapeutic method used to help the body rebalance and heal itself. It uses natural substances in micro-doses. Homeopathic medicines are used to treat many conditions, such as allergies, flu-like symptoms, cough and cold, pre-menstrual syndrome, arthritic pain, etc."

The samples we all received included: Children’s Oscillococcinum to nip flu-like symptoms in the bud and Children’s Coldcalm Pellets, a multi-symptom cold reliever. Interestingly, they told me that adults can use these products as well but I am not sure at what doses and frequency. I am actually most interested in the allergy medicine for my husband so I may need to pick some up. And since the products are available at most natural food stores and major retail drug chains such as CVS, Rite Aid, and Walgreens, I should be able to find it. If you are interested in trying some, you can get a $1 coupon.

I am a bit apprehensive about trying them on my children before myself and that is only because I am always a bit nervous when I give my children any medicine for the first time and I usually start with half the recommended dose to watch for reaction. But I am a worry-wart. I guess I better go get the Allergy medication for my husband first and take it from there.

EatingWell Wednesday - Baked Apples with Agave Nectar

Seeing that yesterday is the official beginning of Autumn, I started daydreaming about all there is to come here in New England: The leaves changing, the leaf pile jumping, the trips to the cider mills, and the pumpkin hayrides. This is my favorite season and we love to be outdoors. In fact, yesterday many of our friends went apple picking and I picked up some apple cider (organic but the same price as the non-organic!).

We love apples in this house: great in breakfast items, a perfect on-the-go snack, quick side for a meal, soups, salads, and dessert. Lately, our local grocery stores have not been carrying granny smith apples so I grabbed a bag of golden delicious and they are our new favorites.

Also, sticking with tradition, I wanted to share some great apple recipes from EatingWell.



Delicious Baked Apples with Agave Nectar
2 organic golden delicious apples
Handful of organic raisins
Tablespoon or so of sliced almonds
Thin slice of butter
1 teaspoon of agave nectar
A few dashes of cinnamon
1/3 cup apple cider

1. Preheat oven to 350 degrees. Core the apples (leave some of the bottom intact if you can) and peel away just a bit of skin around the top. You do not need to but I started to peel them and then realized that I did not know need to do that.

2. Place the apples into a oven proof pan. Add the raisins & almonds into the apples, stick the butter on top, drizzle the agave nectar on and a few dashes of cinnamon.

3. Pour the cider around the apples and bake for approx. 45 minutes. Test doneness by seeing if a skewer can easily penetrate the apple.

Now, kids being kids, they love sweet so we drizzled more agave nectar on top and needed a few more dashes of cinnamon. My daughter, husband and I love this little treat but naturally, my son had the opposite opinion.

Chicken Burgers with Roasted Red Pepper & Baby Spinach

In an attempt to switch up the chicken consumption from the usual breasts, I opted to make chicken burgers. I also wanted to finish up a few items in the fridge so maybe I should call these 'Kitchen Sink' burgers. I guess that is not very appetizing...heck, you name them and leave me a comment with your suggestion.



1 lb. ground chicken breast
1/3 whole wheat panko bread crumbs
1/3 cup feta, crumbled (use reduced fat if you wish)
2 tablespoon scallions, minced
1 garlic clove, chopped
Roasted red peppers (I used 1 left from a jar)
1/2 cup baby spinach, chopped
dash salt & pepper

1. Mix the first 5 ingredients together and shape into 4 patties. Spray a pan with olive oil spray and heat over medium-high.

2. Cook burgers approx. 5 minutes per side (I honestly did not time it). Place on bottom of the roll, top with roasted red peppers and baby spinach. I also made some taziki with Greek yogurt to serve with but that is optional.

We ate these on a fresh Nature's Promise toasted onion rolls. Be sure to only use a dash of salt as the feta is salty.

Fast & Frugal Friday: Pretzel Crusted Baked Chicken Tenders

The family can not get enough of Mom playing around with different coatings on chicken tenders so this time I bring you a recipe with organic oat pretzels. Many of you can go grab these pretzels at your local Stop & Shop as part of their Nature's Promise line.

This is definitely frugal because you use the boneless, skinless breasts you bought on sale and cut them into strips yourself. Then use the bag of pretzels you have been stashing to make a tasty dinner. I tossed some chopped olives on the side along with some sauteed sugar snap peas and the chow down commenced.



Baked Tenders:
1 lb. chicken cut into strips (I found organic chicken at BJ's wholesale)
~2 cups of organic oat pretzels, roughly crushed (do not make too tiny or will not be crispy)
1/2 cup whole wheat flour
1 organic egg
2 tablespoons 1% organic milk
salt & pepper

1. Preheat oven to 400 degrees.

2. Place a cooling rock onto a baking sheet. This is key to a crispy crust.

3. Mix egg and milk in one bowl and combine. Place flour on a plate and season well. Place lightly crushed pretzels on a separate plate and season well. Create an assemble line from left to right as follows: flour, egg mixture, pretzel, cooling rack.

4. Dip chicken strip in flour and shake excess. Dip into egg, then cover with cereal and place on rack.

5. Bake approx. 15 minutes

Serve with Jen's mustard dipping sauce.

Baked Chicken Tenders with Nature's Path Organics

I have often stated to people that there are some good examples of marketing to children and a good example is Nature's Path. It began with 'Cheetah' bars a few years back. It then expanded to Koala bars, and I became obsessed with the Pumpkin Flax Plus Granola (you may have seen the pumpkin bar post). I also try to put my money into companies that have values that I share: real food, educating people about good food choices and believing in sustainability.

Wait, you came for baked chicken tender recipe right? Yes, I am getting to it. The reason I took off on a Nature's Path tangent is that I made some tenders with two of their cereals: Gorilla Munch and Flax Plus Multigrain. Aren't I silly?


So, my inspiration was this: I saw some chicken tenderloins on a ridiculous sale yesterday and wanted to switch things up a bit so I looked around and noted the cereal on the counter and thought 'what the heck'. The gorilla munch is not a super sugary kids cereal and thought, maybe with some salt, we could create the salty/sweet combo so many love. The multigrain seems great as I knew it would make a crunchy crust.

This is a quick item to make but it is rather impressive I must say...oh, and make my dipping sauce, trust me.


Baked Tenders:
1 lbs chicken cut into 'tender' strips.
~2 cups of cereal, roughly crushed (do not make too tiny or will not be crispy)
1/2 cup whole wheat flour
1 egg
2 tablespoons 1% milk
salt & pepper

1. Preheat oven to 400 degrees.
2. Place a cooling rock onto a baking sheet. This is key to a crispy crust.
3. Mix egg and milk in one bowl and combine. Place flour on a plate and season well. Place lightly crushed cereal on a separate plate and season well. Create an assemble line form left to right as follows: flour, egg mixture, cereal, cooling rack.

5. Bake approx. 20 minutes (my strips were thick so check after 15 minutes for doneness.)

Savor's Mustard Dipping Sauce:
Mix the following together and dip away: 2 teaspoons reduced fat mayonnaise, 1 teaspoon yellow mustard, 1 teaspoon Dijon mustard and 1/4 lemon juice.
FYI: The kids preferred the gorilla munch while the adults preferred the multigrain. Also, Nature's Path had sent me some of their newest products and you really should look into trying their new line from Dr. Weil and some great granolas.

Steak with Bruschetta Topping

We are not huge steak eaters as we love the tender cuts and they are costly so when I saw the porterhouse steak on super sale (and they looked good!), I jumped. Now, most folks probably simply season them and stop there but since we had so many tomatoes from our garden, I decided to make a, well, I guess it is a Bruschetta-like topping.

We started by seasoning the T-bone with salt & pepper and while the hubby was babying them on the grill, I tossed a quick topping together and served it on the side. I did this for two reasons:
1. As an optional side

2. To get my son to try eating it. See, he does not enjoy tomatoes but I want him to experiment with flavors in other ways. Yes, I can respect that he does not enjoy eating a straight up slice of tomato but would he enjoy it otherwise? He enjoys marinara sauce so I figured it was worth a shot and he loved it!



A quick chop recipe (far from my scientific nature):
~ 4-5 Tomatoes, chopped and juices
~ 2-3 cloves of Garlic
~2-3 Tablespoons Extra-virgin olive oil
~2 Tablespoons Parsley, chopped (straight from the garden)
~2 Tablespoons Balsamic vinegar

Mix and consume.

EatingWell Wednesday - Fruit & Chicken Salad

I posted earlier about this fantastic broccoli and bacon salad I made for the Time for Lunch Campaign. However, I held out on you as the other lovely salad I made was EatingWell's Fruit & Chicken Salad.

Gosh, we all devoured both of those salads and I was thrilled to find that I still had everything I needed to make my own for a late night snack last night. Yum!

In case you were wondering what the kids thought, they were mad that I made the watermelon and cantaloupe into 'balls' so they marched off and stuck to the corn and grapes.

Slow Food USA's Time for Lunch Campaign: EatingWell Broccoli & Bacon Salad

Today we has a family gathering at our house to celebrate labor day and to recognize the 'Time for Lunch' campaign. The Time for Lunch Campaign is a project of Slow Food USA, an educational non-profit with the goal of creating a world in which everyone can enjoy food that is good, clean and fair.



"Together, we are publicly rejecting the notion that our schools can’t afford to feed kids anything but the bad food that makes them sick. And the way we’re making this statement is by bringing neighbors together in the spirit of good will and for the joy of sharing good food. That is the heart of our movement."

Attend an Eat-In on Labor Day. There are 296 taking place in cities and towns across America. On the website, you can search for Eat-Ins by state and find one near you.

If there isn’t one in your area, sign up to host your own: all you need to do is gather with friends for a Labor Day potluck, take a photo (the more creative, the better) and send it to us to show your support. If enough people sign up today, we’ll pass the 300 mark and our message will be even stronger.
Even if you can not host or attend a potluck, you can sign the petition! The petition states "I believe that change can’t wait: It's time to provide America's children with REAL FOOD at school."
The recipe that we choose for the potluck was from Broccoli & Bacon Salad from EatingWell. The only deviation we made was to use 4 slices of turkey bacon.

Reflecting on the last beach day of the Summer

September 1st was a perfect weather day here and we enjoyed most of it at the beach with friends. I thought for sure we would have more days like this in September and planned on taking the kids right after school.



We have gone twice this month but even though the temperature was 70 and 75, it felt chilly and 'different' at the beach.



I am already yearning for the days when you can feel the beach/coast wrapping you in warmth., I have felt rejected by it lately. I actually feel like I was tricked this year.I know September is back to school and the end of summer but we usually have a bit of an 'Indian summer' but not this time.

Lunch Box Special - Part II Sandwiches & Main Choices

Today was the day: The first day of Kindergarten however, it was only a half day so I only needed to pack a snack. The snack consisted of a container of water, organic purple grapes and some Annie's graham bunnies. This did get me thinking about the practice of packing snacks and a full lunch starting next week. So onto Sandwiches/Main Items ideas:

Breads and Alternatives (how about varying the types of breads you use**see video):

  • Multi-grains, seeded (flax etc) and whole wheat.
  • Pitas
  • Bagels. Better yet, mini-bagels.
  • Local Bakery: Local bakeries often make preservative free bread with all kinds of additions such as sun-dried tomato and garlic.

Sandwich Fillings (remember to use a cold pack when appropriate):

  • PB&J: How about trying almond or cashew butter (some schools do not even allow peanut butter)
  • Deli Meats: Ham, Turkey and Chicken are staples but look for no nitrate/ites added and preservative free. Pair with tomatoes, different lettuces and mustard.
  • Vegetables: Pack all their favorites together with a spread (hummus maybe)
  • Tuna or Salmon (with lemon juice and onion with just a touch of mayo.)
  • Steak sandwiches
  • Burger Patties: Hamburger, Turkey, Bison
  • Quesadillas
  • Tacos
  • Egg or Chicken Salad
  • Hard boiled eggs
  • Pita chips with hearty dips
  • Quiches (a slice or make individual minis)
  • Alternative spreads: cream cheese, pesto, hummus, mashed avocado or bananas.
  • Leftovers from Dinner such as grilled chicken

Miscellaneous:

  • Baked Chicken Tenders (send with mustard dip)
  • Salads (green leafy or pasta)
  • Cereal with a side of milk

Drinks:

  • Milk (Plain or Horizon Organics has vanilla, chocolate and strawberry varieties)
  • Juice (Dilute apple, white grape, orange juices)
  • Water. Do not feel guilty if you send you kids to school with milk and water. They do not need juice every day.
